Franchise Development Veteran with 18 Years of Industry Experience to Lead Next Chapter of Strategic Growth

In his new role, Eby will lead national franchise development strategy for Another Broken Egg Cafe, drawing on more than three decades of business experience, including 18 years in franchising. The promotion elevates a leader who is already deeply familiar to the brand’s franchise community, having worked directly with many current franchisees through their own discovery and onboarding.

Eby joined Another Broken Egg Cafe in 2021 as Director of Franchise Sales, where he has helped lead national franchise development, consistently averaging more than 25 units sold annually. Eby redesigned the brand’s lead generation and pipeline architecture, built a data-driven tracking system that improved forecasting accuracy and visibility into development performance, and personally guided franchise candidates through discovery, validation and closing.
Before joining Another Broken Egg Cafe, Eby spent seven years as Senior Manager of Franchise Development for Firehouse Subs, where he secured more than 300 new franchisees, representing over 1,000 unit commitments, during one of the most active growth periods in the brand’s history.

As part of the brand’s continued investment in franchise growth, Another Broken Egg Cafe has also named Shae Schultz as Director of Franchise Sales. Schultz brings more than 15 years of franchise development experience, most recently with Yogurtland and iCode School, and will work alongside Eby to qualify candidates, manage the pipeline and grow the brand’s franchisee base in priority markets.
With 10 to 12 locations opening annually over the last several years, Another Broken Egg Cafe’s daytime-only model continues to stand out to prospective franchisees. The brand’s single-shift structure eliminates dinner and late-night staffing, supporting stronger work-life balance for owners and staff while simplifying day-to-day operations.
