JINYA, Ignites West Hollywood with Flagship Live-Fire Dining Concept
April 06, 2026 // FranchisePR.com // LOS ANGELES — A new flagship is about to redefine Japanese dining in West Hollywood. JINYA., the definitive flagship concept, will be opening its doors on April 17 introducing an elevated, full-service restaurant centered on live-fire grilling, expertly prepared sushi and thoughtfully crafted cocktails.
JINYA. West Hollywood marks the culmination of the brand journey.
After more than fifteen years of evolution across celebrated concepts including JINYA Ramen Bar, Robata JINYA and Saijo, founder Tomo Takahashi returned to the brand’s essence — to create what is called the final form of JINYA. Originated in Japan and refined over 26 years since 2000, the concept reflects an ongoing evolution of the brand. The name highlights the concept’s evolution and unlike other concepts in the portfolio, the restaurant carries no descriptor — no Ramen or Robata. Instead, it simply stands as JINYA., with the period serving as a deliberate punctuation mark that signals the brand’s most complete expression to date. While JINYA Ramen Bar is the brand’s signature ramen concept and Robata JINYA offers an authentic, casual Japanese izakaya-style experience, where guests can enjoy traditional robata cooking in a lively and approachable atmosphere. JINYA. brings those influences together in a flagship concept that reflects the full vision of the brand.
A New Culinary Centerpiece: Live Fire
JINYA. places the spotlight on a dramatic Live Fire Grill experience, using both wood and charcoal to unlock bold, natural flavors. Traditional Japanese techniques are elevated through a modern live-fire approach — honoring precision, restraint and authenticity while embracing depth, smoke and intensity.
The menu showcases:
- Shareable dishes to begin your journey
- Dry-aged premium seafood and meats
- Sushi crafted with fresh, carefully selected fish
- A curated cocktail program to complement the fire-forward cuisine
Menu highlights include dry-aged Ora King salmon and Kanpachi sashimi, live-fire grilled 16-ounce ribeye and bone-in short ribs, premium nigiri and signature rolls, and wood- and charcoal-grilled seafood, meats and seasonal vegetables. Bar bites and small plates feature innovative creations like crispy rice with spicy tuna, A5 wagyu carpaccio, and shrimp toast with optional caviar or uni, which has been one of its popular signature items since the opening of the first Tokyo location in 2000.
Complete the experience with noodle and rice dishes such as A5 Wagyu Garlic Rice or Lobster Garlic Noodles, and finish with Japanese-inspired desserts including Ube Mont Blanc and Matcha Tiramisu.
A dedicated climate controlled aging room sets JINYA. apart, enhancing the richness and complexity of ingredients such as Ora King salmon, red snapper, branzino and prime rib before they ever meet the grill. The result: deeper umami, intensified flavor and exceptional texture.
Precision. Purity. Culmination.
At its core, JINYA. is built on a simple philosophy: Execute the fundamentals flawlessly. High-quality ingredients. Disciplined technique. Minimal intervention. Each dish is designed to highlight the natural integrity of its components — a refined balance between tradition and innovation.
JINYA. represents the most ambitious evolution of the brand to date — a premier concept designed to showcase the full spectrum of JINYA’s culinary vision. JINYA. is open for dinner from 5 p.m. to 10 p.m., with happy hour daily from 5 p.m. to 6:30 p.m.
