Konala Healthy Fast Food to Open Three New Locations in 90 Days Across Spokane, Provo, and New Jersey
April 24, 2026 // FranchisePR.com // COEUR D’ALENE, Idaho – Konala will open three new locations over the next 90 days: Spokane, Washington on April 30; Provo, Utah on May 28; and Belleville, New Jersey in July. The brand has now signed 40 franchise units.
The Spokane is a corporate-owned store opening April 30 directly across from Gonzaga University’s basketball stadium. The restaurant occupies the ground-floor corner of a new student housing development owned by NBA Hall of Famer and Gonzaga alum John Stockton. Four weeks later, franchisee Tyson Adams will open Konala’s first Utah location in Provo – adjacent to Brigham Young University’s campus – inside a converted Arby’s. Adams signed a five-unit development agreement and is already evaluating sites in Salt Lake City and other Utah markets. The third opening, franchisee Anthony Menicola’s first New Jersey location is slated for July.
“We’re moving fast, but that’s intentional. Both the Spokane and Provo locations sit adjacent to major university campuses, reinforcing Konala’s appeal in markets with high demand for fast, protein-forward food options. The brand’s menu is 100% gluten-free and built around bowls like Teriyaki Chicken, Greek Steak, and Chicken Burrito, with up to 55 grams of protein per bowl.
