The Flying Biscuit Café Signs Lease in Abilene, Texas
Abilene, TX // FranchisePR.com // August 19, 2026 — The Flying Biscuit Café has signed a lease for its first café in Abilene, Texas, at 2467 N Judge Ely Blvd., bringing the Atlanta-born all-day breakfast and brunch brand to West Texas for the first time. The café will be the brand’s first in Texas outside the greater Houston area.
The café will occupy space at Allen Ridge, an approximately 30,000-square-foot dining, retail and entertainment development at the corner of E Ambler Avenue and N Judge Ely Boulevard, just off Interstate 20 and less than a mile from Abilene Christian University.
The café will be owned and operated by franchise partners Edward Ortiz, Samantha Ortiz and Edgar Ortiz. The Ortizes come to the brand as experienced franchise owners, already operating a couple of other franchise businesses — so they know what it takes to build one from the ground up. Flying Biscuit is the concept they wanted to bring home to Abilene.
“We wanted to bring something new to West Texas, and Abilene is home,” said Edward Ortiz, franchise partner. “What matters most is giving friends and families a place to sit a while. We want everyone who walks in to leave planning the next visit — and we’d like Abilene to claim this one as its brunch spot.”
An opening is targeted for the first quarter of 2027, with the date to be announced as buildout progresses.
Real estate representation for the property was provided by ARL Retail, the developer of Allen Ridge.
The Flying Biscuit Café is actively awarding franchise territories across Texas.
