Wild Eggs Hatches New Breakfast, Brunch, and Lunch Menu
August 12, 2024, LOUISVILLE, Ky. – Wild Eggs is thrilled to hatch several egg-ceptional new and returning menu items, available now. New items include Bloody Mary Grilled Cheese, Batman & Reuben, Breakfast Lasagna, Blueberry Tall Cakes, Bacon City Omelet, Cuban, Deviled Egg Salad, Peach Mimosa, a new sharable item – Baked Apple – and two additional eggs benedict offerings – California Bennie and Corned Beef Hash Bennie. Additionally, all restaurants will now serve 100% fresh-squeezed orange juice. Back by popular demand, Wild Eggs is also thrilled to welcome the return of its Crepes, Loco Hash, and 100% Maple Syrup.

Breakfast Lasagna features layered buttermilk pancakes, cheddar jack cheese, house mornay, crumbled sausage, scrambled eggs, and sweet syrup – topped with melted cheddar jack cheese. Joining Wild Eggs’ signature Strawberry Tall Cakes is Blueberry Tall Cakes – buttermilk pancakes, fresh blueberries, blueberry compote, whipped cream, and powdered sugar. The new Bacon City Omelet is a four-egg omelet stuffed with bacon, Monterey Jack and cheddar cheeses and topped with Wild Eggs’ homemade white cheddar moray sauce. Additionally, Wild Eggs is offering a new salad option – Deviled Egg Salad, which includes Wild Eggs’ Pops’ Popping Egg Salad on top of a bed of fresh mixed greens, tomatoes, red onion, and finished with chopped parsley and smoked paprika.
New sandwich offerings include the Batman & Reuben, Bloody Mary Grilled Cheese, and Cuban. The Batman & Reuben offers piled lean corned beef, Swiss cheese, sauerkraut, and Russian dressing on toasted light rye bread. Featuring Zing Zang battered sourdough, white and yellow cheddar cheese, roasted tomato and bacon jam, the Bloody Mary Grilled Cheese is an ode to the classic brunch cocktail with a skewer of pepperoncini, a Habagardill Pickles chip, green olive, and fresh jalapeno. The Cuban features a grilled hoagie roll, crispy carnitas, shaved ham, Dijon mustard, pepper jack cheese and Habagardil Pickles.
Joining the ranks with Wild Eggs’ House-Made Cinnamon Roll, Biscuits & Gravy, and Avocado Toast, the restaurant chain introduces a new shareable menu item, Baked Apple, which features oatmeal pecan crumble, brown sugar glaze and whipped cream.
Under the “Bonnie’s Bennies” section of the menu, Wild Eggs is adding two eggs benedict offerings – California Bennie and Corned Beef Hash Bennie. California Bennie features a grilled English muffin, avocado, smoked turkey, and grilled tomato, topped with poached eggs, fresh hollandaise, chopped bacon, and smoked paprika. Corned Beef Hash Bennie includes ironed hash-brown casserole, seasoned lean corned beef, sautéed onions, and bell peppers, topped with poached eggs and Russian hollandaise sauce.

Returning items include Wild Eggs’ Loco Hash and Crepes (Sweet Home Apple Bourbon, Blueberry, and Chicken Florentine). Loco Hash is a signature Wild Eggs creation that features skillet potatoes topped with crispy carnitas, queso, sautéed onions, bell peppers, and jalapenos, served with two eggs any style and topped with sour cream, avocado, pico de gallo, and green onions.
Sweet Home Apple Bourbon Crepes are warm crepes filled with sweetened cream cheese, topped with apple bourbon compote, candied pecans, whipped cream, powdered sugar, cinnamon and a honey drizzle. Wild Eggs’ Blueberry Crepes are warm crepes filled with sweetened cream cheese and topped with house-made blueberry compote, powdered sugar, and whipped cream. Chicken Florentine are tender crepes filled with pulled chicken breast, spinach, mushrooms and cream cheese, topped with white cheddar mornay, diced tomatoes, green onions and smoked paprika.
Wild Eggs has added a Wild Spirit Menu item, Peach Mimosa, to its lineup of mimosas – Pomegranate, Strawberry Lemonade, Orange and Pineapple – at its locations that sell adult beverages. To celebrate the new menu, Wild Eggs is offering a limited-time mimosa pitcher discount.
